yes you can create resource calendars. When you go to calendars up top you have 3 choices global resource and project so select the resource calendar make sure ot assign the resource to the resource calendar
just one more question. Is it possible to create a calendar for each individual resource, which reflects the fact that some of them start later than others? Is this a more effective way of reflecting different start dates for resources?
The reason I don't want to keep resource dates synced with activity dates, and then change them individually is purely because in some cases resources start several weeks or even months after the activity starts........which means I'll be spending a lot of time individually levelling resources.....

why not link the activities recalculate then schedule the project and then check how the resources are being spread over the sanctities.
you do not UPDATE the start date unless it is an ACTUAL date
