Manual adjustment of performance % complete and variance in days from Project Baseline.

Hi guys!!! can anyone tell me that how we can adjust the performance % complete manually if you don't want to reflect a big amount of performance percent delay in P6 and due to that a big delay comes out in the form of variance from project baseline.
