It is not just about labor, equipment do matter. It is not the same pouring using a crane and bucket than a high capacity concrete pump.
Work is mostly done in teams, the composition of the team, labor and equipment used will mostly determine production rates. For same work different teams will have different production rates.
I suggest getting reference books such as RS Means which not only give you unit costs but also team composition and productivity. These books are no substitute to your own historical records and shall be used to estimate the few activities for which you do not have historical records.
