I want one bar that goes up to a point with the baseline date, then goes further with the update and to the end with the last update (poorly explained I know)

then put them all on the same row number. this is not the correct way to do it but its your call i am just telling you how to do what you want.

1st maintain and assign 3 baselines
then in the gantt area right click bars and select the primary baseline, the seconday basline and the tertiary basline
make sure that each of these has their own row number (listed under Pattern) or they may be on top of one another.
